- 1 lb. (500g) flour (sifted)
- 8 oz. (250g.) butter
- 2 oz. (60g.) castor sugar
- 2 egg yolks (lightly beaten)
- 4 oz. (125g.) peanuts (dry-fried, skinned & finely pounded)
- 4 oz. (125g.) castor sugar
- Beat butter and sugar together till creamy and light.
- Fold in flour, stirring it in well.
- Knead lightly into a smooth dough. Turn out onto a lightly floured surface and roll out less than 1/8 in. (3mm.) thick.
- Cut into 4 x 6 in. (10 x 15cm.) pieces.
- Brush some egg yolk on each piece of dough and sprinkle generously with filing ingredients. Roll up.
- Place on a lightly greased baking trays. Bake in a preheated oven at 350°F for about 15-20 mins. or till firm and golden.
- Remove from oven, cool and serve.
