Putri Salat

Ingredients for Pulut Seri Muka/Kuih Salat:
  • 1 1/2 grated coconut 
  • 2 cups pulut rice (soaked overnight)
  • 1/2 tsp. salt
  • 4 eggs (lightly beaten)
  • 6 Tbs. sugar
  • a few drops green or yellow colouring
  • 2 tsp. custard powder
  1. Squeeze out 5 oz. (150ml.) first santan from grated coconuts. 
  2. Add a little water to grated coconut and squeeze out 10 oz. (300ml.) second santan.
  3. Drain pulut rice and mix with salt and second santan.
  4. Put in a shallow square tray.
  5. Steam 25 mins. Sprinkle 2-3 tablespoon of first santan over rice and steam another 5 minutes.
  6. Mix eggs with sugar, green colouring, custard powder and rest of first santan till smooth.
  7. Press down rice layer to make it compact. Pour egg mixture over rice.
  8. Steam about 25 minutes till topping sets.
  9. Cool well before cutting into desired shapes to serve.
