Easy Cherry Cake

Ingredients for Cherry Cake:
  • 6 oz. (185g.) flour + pinch of salt + 1 tsp. baking powder - (sifted together)
  • 9 oz. (280g.) butter
  • 7 oz. (220g.) castor sugar
  • 5 eggs
  • 1 tsp. vanilla essence
  • 2 oz. (60g.) cherries (sliced)
  1. Cream the butter and sugar till light and fluffy.
  2. Add eggs one at a time, beating well after each addition. Stir in vanilla essence.
  3. Toss cherries in flour. Fold cherries and flour into creamed mixture.
  4. Pour mixture into a greased and lined baking tin.
  5. Bake in a preheated oven at 350°F till lightly browned and a skewer comes out clean when inserted.
  6. Remove from oven, cool and serve.
