- 6 oz. (185g.) flour + pinch of salt + 1 tsp. baking powder - (sifted together)
- 9 oz. (280g.) butter
- 7 oz. (220g.) castor sugar
- 5 eggs
- 1 tsp. vanilla essence
- 2 oz. (60g.) cherries (sliced)
- Cream the butter and sugar till light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla essence.
- Toss cherries in flour. Fold cherries and flour into creamed mixture.
- Pour mixture into a greased and lined baking tin.
- Bake in a preheated oven at 350°F till lightly browned and a skewer comes out clean when inserted.
- Remove from oven, cool and serve.
