- 8 oz. (250g.) butter
- 8 oz. (250g.) castor sugar
- 6 eggs
- 6 oz. (185g.) flour + 6 oz. (185g.) custard powder + 3 level tsp. baking powder - (sifted together)
- jam (for filling)
- Beat butter and sugar till creamy and light.
- Add eggs one at a time, to mixture, beating well after each addition.
- Fold in flour gradually, mixing well into a smooth mixture.
- Half fill lightly greased bun tins with mixture. Bake in a preheated oven at 350°F for 15-20 mins. till well risen.
- Allow to cool before cutting out centres 2/3 way down.
- Fill centres with jam, then place cut-out sections on top so that cakes resemble upside-down mushrooms. Serve.
