Easy Jack-fruit Cake

Ingredients for Jack-fruit Cake:
  • 2 cups jack-fruit flesh (thinly sliced)
  • 1 cup flour
  • 2 eggs + 2 cups sugar - (beaten together)
  • 3/4 cup evaporated milk
  • 3-4 pandan leaves
  • 1 Tbs. water
Method:
  1. Pound pandan leaves. Mix with 1 Tbs. water and squeeze out juice. Strain.
  2. Add milk to egg and sugar mixture. Beat well.
  3. Add flour and stir to mix.
  4. Stir in jack-fruit and pandan juice.
  5. Pour into lightly greased baking tray.
  6. Bake in a preheated oven at 400°F till golden brown.
  7. Cool and cut into small pieces. Serve.
