- 3 eggs (separate yolks & whites)
- 3 oz. (90g.) castor sugar
- 2 Tbs. boiling water
- a few drops of vanilla essence
- 3 oz. (90g.) flour + 1/4 tsp. baking powder - (sifted together)
- pinch of salt
- 3 1/2 (105g) chopped pineapple & cherries
- 1 Tbs. cashew nuts (chopped)
- 4 oz. (125g.) butter
- 1 egg
- 8 oz. (250g.) icing sugar
- a few drops of vanilla essence
- Whisk egg whites till fluffy. Add egg yolks one at a time and beat well.
- Add sugar and beat till thick and creamy. Pour boiling water and beat, adding vanilla essence. Fold in flour with salt added.
- Pour mixture into a greased and lined swiss roll tray and smooth evenly.
- Bake in a preheated oven at 370°F for 20-25 mins.
- Remove from oven and quickly turn cake over onto a piece of grease-proof paper over a damp towel. Spread with butter cream and trim of crust.
- Sprinkle with chopped fruits and roll up as in swiss roll.
- Spread remaining butter cream on top and scrape lightly with tines of fork. Sprinkle nuts over it. Cool and cut into neat slices. Serve.
