Honey Chocolate Fingers

Ingredients for Honey Chocolate Fingers:
  • 2 oz. (60g.) butter
  • 3 oz. (90g.) thick honey
  • Mixed - 4 oz. (125g.) self-raising flour (sifted) + 2 oz. (60g.) dessicated coconut
  • 1 egg
  • 4 Tbs. milk
  • 4 oz. (125g.) chocolate chips
  • 2 Tbs. boiling water
Method:
  1. Cream butter and honey till well blended. Add 2 Tbs flour and coconut mixture to butter and honey mixture.
  2. Break in egg and beat well together.
  3. Gradually beat in remaining flour mixture and finally the milk.
  4. Pour mixture into a greased 2 pt. (1.2.l.) pie dish and bake in a preheated oven at 350°F for 15 mins.
  5. Dissolve chocolate chips in boiling water over low heat.
  6. Pour melted chocolate over sponge. Continue baking at 325°F for 5 mins.
  7. Remove from oven, cool slightly and cut into fingers. Serve.
