- 2 oz. (60g.) butter
- 3 oz. (90g.) thick honey
- Mixed - 4 oz. (125g.) self-raising flour (sifted) + 2 oz. (60g.) dessicated coconut
- 1 egg
- 4 Tbs. milk
- 4 oz. (125g.) chocolate chips
- 2 Tbs. boiling water
- Cream butter and honey till well blended. Add 2 Tbs flour and coconut mixture to butter and honey mixture.
- Break in egg and beat well together.
- Gradually beat in remaining flour mixture and finally the milk.
- Pour mixture into a greased 2 pt. (1.2.l.) pie dish and bake in a preheated oven at 350°F for 15 mins.
- Dissolve chocolate chips in boiling water over low heat.
- Pour melted chocolate over sponge. Continue baking at 325°F for 5 mins.
- Remove from oven, cool slightly and cut into fingers. Serve.
