- 6 oz. (185g.) castor sugar
- 2 oz. (60g.) melted butter
- 6 eggs
- 1/2 tsp. vanilla essence
- 4 oz. (125g.) flour + 1/2 tsp. baking powder + 2 tsp. coffee powder - (sifted together)
- warm jam
- Beat sugar and butter till creamy, then add eggs and vanilla essence.
- Fold in the flour mixture a little at a time.
- Pour mixture into 2 greased and floured 9 in. (23-cm.) sandwich tins.
- Bake in a preheated oven at 350°F for 20-30mins.
- Remove from oven and turn cakes onto wire trays to cool.
- Spread jam on the top of one cake and place the other on top of it to make a sponge sandwich.
- Cut into neat slices and serve.
