Steamed Jelly Rolls

Ingredients for Steamed Jelly Rolls:
  • 5 large eggs
  • 5 oz. (155g.) castor sugar.
  • 3 Tbs. evaporated milk
  • 1 tsp. vanilla essence
  • 5 oz. (155g) flour (sifted)
  • 2 sheets wax-paper
  • strawberry jam
Method:
  1. Beat eggs and sugar toll creamy for 20 mins. Add milk and vanilla essence. Beat 2 mins. Fold in flour gradually.
  2. Bring water in steamer to boil. Line upper steamer with a sheet of wax-paper.
  3. Pour ½ cake mixture onto the sheet. Spread into a thin layer.
  4. Steam for 5 mins., when cake should be springy and dry to touch. Remove from steamer and peel off paper while hot. Spread jam on this side.
  5. Roll one end to the middle of cake and stop. Starting from the opposite edge, roll to meet in the middle too. Leave this roll aside.
  6. Make another cake with the remaining cake mixture. Do the same as before.
  7. Slice rolls to serve.
