- 4 oz. (125g.) margarine
- 6 oz. (180g.) black treacle
- 2 oz. (60g.) golden syrup
- 2 oz. (60g.) brown sugar
- 1/4 pt. (150ml.) milk
- 2 eggs (beaten)
- 4 oz. (125g.) sultanas
- 8 oz. (250g.) flour
- 1 heaped tsp. mixed spice
- 1 tsp. bicarbonate soda
- 3 level tsp. ground ginger
- Put margarine, black treacle, golden syrup and brown sugar in a saucepan and warm.
- Add milk and leave to cool.
- When cooled, blend in the beaten eggs.
- Add mixture to the sifted ingredients and mix well. Gently fold in sultanas.
- Pour mixture into a greased and lined cake tin.
- Bake in slow oven at 350°F for 1 ½ hrs. Turn out and cool on a wire tray. Slice to serve.
