Dutch Letterbanket Cake

Ingredients for Dutch Letterbanket Cake:
  • 8 oz. (250g.) flour (sifted)
  • 10 oz. (315g.) cold hard butter (cut into small cubes
  • 1/4 cup water
  • 2 egg whites
Filling Ingredients:
  • 10 oz. (315g.) almonds (ground)
  • 10 oz. (315g.) castor sugar
  • 2 eggs (beaten)
Method:
  1. Put flour, butter and water in a mixing bowl. Mix to a soft dough.
  2. Turn out onto a lightly flavoured surface. Roll out into an oblong and fold it 3 times.
  3. Turn so that the folded edge is away from you and roll out again into an oblong.
  4. Repeat folding and rolling process 3 more times, then cut into 4 equal pieces.
  5. Mix filling ingredients well and divide into 4 equal portions.
  6. Spread each portion of filling down the centre of a piece of dough.
  7. Brush edges of dough with egg white, then roll up. Bind edges well.
  8. Place rolls on greased baking trays and bake in a preheated oven at 425°F for about 40-45 mins.
  9. Cool and cut into slices.
