- 1 cup custard powder
- 4 oz. (125g.) castor sugar
- 1 cup water
- 1 grated coconut
- 2 pieces gula melaka (crushed)
- 1/4 tsp. salt
- 1 pandan leaf (tied into a knot & slightly crushed)
- a few banana leaves (scalded & cut into 8 x 6 in. / 20 x 15cm. pieces)
- 4 pisang rajah (peeled & cut into diagonal slices)
- Blend together custard powder, sugar and water.
- Add some water to grated coconut and squeeze out 2 1/2 cups santan.
- Put santan with gula melaka, salt and pandan leaf in a pot and stir over low heat till gula melaka dissolves.
- Remove from heat and strain.
- Stir bit by bit into custard powder mixture.
- Pour into saucepan and cook over low heat, stirring constantly till thick.
- Place a heaped tablespoonful cooked mixture in centre of banana leaf. Top with 3-4 slices banana and cover with another spoonful of mixture. Fold banana leaf lengthwise over mixture and tuck the other ends under. Use up all the cooked mixture, slices of banana and banana leaves this way.
- Steam for 10 mins. Serve hot or chilled.
